The village has the features and shows a town planning structure typical of the medieval villages.
The most ancient document mentioning Capalbio, is the Leonino Carolingia bull through which Carlo Magno, donated the Castle of the Three Fontanas Abbey to Rome. Some historicians support, instead, that the village was inhabited since the most remote antiquity; this is confirmed also by the finding of tombs of the bronze and archaic age.
In der Nähe von Cabalbio befindet sich in Garavicchio der Giardino dei Tarocchi (Tarock-Garten), ein originelles Werk des französischen Künstlerin Niki De Saint Phalle: aus dem Grün des bewaldeten Hügels ragen die polychromen Skulpturen hervor, die mit Gips, Keramik und Spiegeln überzogen sind und sich an den zweiundzwanzig höchsten Geheimnissen des Tarocks inspirierten.
